Yesterday was grocery day, I love grocery day because I get to pick up veg, meat (poultry, red meat and fish) and fruits so to make my daily recipes.
Every day is a new day, I don’t plan in advance, I just open my fridge and boom I get inspired by the colours, variety of food there is and just like that start inventing a dish.
Every dish is an invention yes, I do watch a lot of food programs too so to get inspired and also to push me try new things and get out of my comfort zone. For instance deserts are my black horses. I am ok at them but not as good as my savoury food is. Do I want to be better? Certainly but not a necessity. I do excel at cupcakes though, as I already made my batch for the week (ie treat for the kids) I won’t tackle writing down my recipe today but will reveal it soon enough for you to try 😉
Today I am going full on lamb roast with pink mash and veg. Pink mash? Wait till you try it! I saw this episode of ‘Come dine with me’ I know it’s hilarious at times but entertaining and occasionally you get the good tip! Like my pink mash!
The idea came from my daughter, her favourite colour, not to be so original for a girl 😉, is pink. And she did ask me the other day that she’d fancy pink food more than regular colored. No offence to the other veg, it’s her cute phase. Can’t complain, she tries everything so Lyla, this pink mash is dedicated to you!
But first the lamb. I like a good piece of shoulder, something with the bone, cause there’s nothing like a bone to give that extra taste the meat and sauces. Also myself and my daughter like to eat on the bone.
So I picked up a nice piece of lamb nearing the kg and sealed it first, then covered it with cumin and turmeric. Both spices are so good for you. Check this out!

Alright so now that we got a tiny bit more educated about my favourite 2 spices, I chopped an onion and 3 cloves of garlic (what’s a meal without onion and garlic??) and added it to the pan, my lamb is now nice and brown, the smells are amazing! Next step adding water salt, covered it and in the oven 180 DC up to 200 for about 2 hours.
Time for the mash and veg!
Wash peel cut as many potatoes as you want, put in a casserole and add water and salt, let the potatoes cook. Once nice and soft, I add a TBs of butter and half a cup of cream (here again depending on your taste and potato quantity!) I like nutmeg in my mash so in goes a pinch of it now to the magic ingredient! Beetroot! Yes one small pre cooked beetroot will do the trick and you know what? Beets are aphrodisiac so if you have a dinner date you want to impress, get your beetroot out!
Mash it all up so it is nice and smooth and put aside.
The lamb should now be half way through. Take it out of the oven to check and smell, move the lamb around and add the beans. Quick stir, lid and back in the oven for the next half.
Onto your veg of choice, I have carrots, parsnip and green beans washed peeled when needed and ready to be soaked for 5 min only in hot boiling water. I will season them right before serving.
