Little treats for my little ones, I tend to never buy chocolate biscuits or cakes from the stores, I just think that it is much better to do it yourself and I do have a great concerns about sustainable palm oil and since palm oil is every where, no kidding even cosmetics!! It terrifies me what is currently happening to the world. I love nature and I can’t seem to understand why do human feel the need to destroy something so beautiful!
Anyhow, in my endeavour to do what I think is right, to do my little bit of action towards saving the Orangutans and Amazonian forest, well I have made the decision to ban any palm oil base products from our diet in and out, meaning what I put in our mouth and our skin.
So I have bought a very fine non palm oil derived 70% sustainable chocolate and decided on chocolate balls!
Here’s my recipe 😊
A tsp of vanilla extract
80g of butter
100g of non-processed sugar , I use brown sugar
100g of flour
2 free range eggs
85g of icing sugar and 80g of butter, a bit of milk for the icing mixture
125g of 70% dark chocolate
First we got to make the cake, melt the butter and mix it with the sugar until its all smooth and thick, that s when we add the 2 eggs one at the time and continue mixing, add the vanilla extract and finally incorporate the flour, folding it into the mixture.
Pour the whole thing into a thin and oven bake on 180 DC until baked (it took mine about 20min)
Once done, let it out of the thin and leave to cool…once cooled shred it and make the icing by mixing the butter and icing sugar. What I do is I cut the butter into small chunks and add lets say a spoon full of butter with a spoon full of icing sugar, mix it well and add a half spoon of milk, I alternate like that continuously until the mixture becomes soft and smooth, try it and fix the level of icing sugar, milk or butter. I end with a dash of vanilla extract to your taste.
Once done mix it all up with the shredded cake and form balls that you lay on a baking papered tray.
Its time to melt the chocolate – I choose bain marie as I am totally opposed to the radiations coming from the microwave but that s my choice…
Once melted roll in the cake balls one by one ! that s somethingyour kids will be sooo happy getting tucked in and helping with. The mess is ok to handle once you see their faces shine!
Exceptionally I had poured different sparkly eatable treats both my kids were delighted to create their own cake balls.
Finally pop in some lollipops wooden sticks and leave to cool down in the fridge or for quicker result, the freezer.
